Tuna Tartar with cucumber yoghurt
 
Ingredients :

75 gms (3 oz) of fresh red tuna (sashimi grade), 20 gms (1 tbsp) of pickled ginger slices, 1 tsp of fresh ginger juice, squeezed from grated ginger, 3-4 (1/4 cup) of spring onions chopped into small rings, 1/8 tsp of Wasabi paste, 1 tbsp of Soy sauce, 1 recipe of Cucumber Yoghurt Sauce to garnish shredded cucumber, sesame seed cracker, sesame seeds

Dressing Direction :

Mix together 1 tbsp yoghurt, 2 tbsp pureed cucumber (seeds removed), salt and pepper to taste.
